With this summer heat I’m in need of a cool and easy breakfast. Lately I’ve been waking up around six just to enjoy some fresher weather, but currently the temperature doesn’t drop below 25 degrees C. Not even at four o’ clock in the morning.
So to give myself a way to cool down, I prepare the following breakfast.
1 or 1,5 frozen banana
Oatmeal milk (just a splash)
30 – 50 grams of oatmeal/muesli or your own granola
Extra toppings (optional):
1 Tbsp of peanut butter*
Fresh strawberries (when seasonal)
Or other fresh fruit
1.Put 1 (or 1,5) banana in the freezer the night before (or an hour before your breakfast). Defrost it for 15 minutes before having your breakfast if it stayed in the freezer all night.
2.Put the banana in a blender with a splash of oatmeal milk (any kind of milk works). Don’t use too much though, because you don’t want it to become runny, it needs to become a little bit like ice cream.
3.Add your cereals (oatmeal/muesli/granola).
4.Decorate with some extra toppings.
It’s a super simple breakfast, but because it’s fresh and reminds you of ice cream, it’s ideal for summer. Almost like having dessert for breakfast.
Depending on how hungry I am, I use a lot of toppings or only few. Unfortunately strawberry season is over, but there’s plenty of other fruit to use and sometimes I’m just in the mood for peanut butter and chocolate sprinkles. *Make sure you use a proper peanut butter though. It needs to be 100% peanuts.
