Would you likte to keep things simple while cooking? Then I’d like to suggest the recipe below. It’s quick, tasty and healthy. Besides, a frittata is such a well-known dish in Italy, that it has many variations, and this is the cauliflower one.
Ingredients for 4 portions:
2/3 of a cauliflower
no more than 100 ml of milk (I use plantbased milk for this)
3 tbsp of flour
2 tbsp of parsley
Drop of olive oil
salt and pepper to taste
(Some additional olive oil to spread across the oven dish)
1.Clean the cauliflower and cut it into small pieces. Then boil it for about ten minutes and add a little bit of salt. It needs to be cooked properly, but not too much.
2.Crack three eggs, put them in a big bowl and whisk them. Then add the boiled cauliflower to the eggs and smash it into tiny pieces.
3.Add some flour and stir again. It’s very likely that the mixture will now become a little bit thick and this is why you should slowly add some milk. However, not too much. You need to be able to stir, but the mixture should not be too runny.
4.Add the parsley, a drop of olive oil and some salt and pepper and give it another stir.
5.Prepare the oven dish. Spread a little bit of olive oil across the oven dish to prevent the frittata from sticking too much to the bottom. Then put the mixture into the oven dish.
6.Turn on the oven to 190 degrees C. and put the frittata inside while the oven is still heating. It needs about 20-25 minutes, but this really depends on the oven as well, so it’s wise to keep an eye on it.
Usually, you do frittata in a pan on the stove. However, if you’re as clumsy as me and you don’t like to start flipping frittatas, then use the oven as suggested in this recipe.
